I cannot believe we only have a couple days left of January! At the very beginning of the year I posted my focus for each month of 2018, and I’m already thinking ahead to get ready for my February focus- a gratitude journal. More on that later.
As for the Whole 30, this week went great! I did wake up in the middle of the night in a panic because I dreamt I ate nachos at work. It took me a second to realize I didn’t actually eat them. Crisis averted. Speaking of sleep, I’ve been sleeping great, and I wake up with a lot of energy to hit the gym; however, towards the end of the night when Tim and I try to watch a show, my eyes are closing before 7:30. Seriously. I know I put in long days with my 5am workouts and teaching on my feet all day, but I should be able to make it until 8:30, right? I’ve been wondering if this extra exhaustion has anything to do with the Whole30, or if I’m just getting old.
With only 2 days left before starting to slowly reintroduce foods, I’m sad it’s almost over. I mentioned in last week’s recap, once it’s technically over it’s not as easy to explain to people why I’m not eating something. Plus, it is technically over- so I could have some. And depending on what it is, I might. I’m not going to feel bad about it, but it’s the stomach aches and bloat that I don’t want to see again. We’ll see. I am excited to go out to eat again without being too restricted. Salad dressing on the side isn’t going to kill me.
Let’s talk this week’s food. Nothing new here with breakfast. Why fix what isn’t broke? These sweet potato bowls are going to stick around post whole 30 for sure. So delicious and perfect after my workout.
Last weekend I prepped lunch for the week by laying thin chicken breasts on the pan and slicing random veggies on top, and cooking for about an hour on 375. I chopped tri color potatoes, zucchini, red onion, olives, cherry tomatoes, and lemon. Drizzled with melted coconut oil, garlic, salt and pepper.
As for dinner, I stuck with the shredded salsa chicken for the most part. Then all I have to worry about it the veggies. Simple and satisfying.
On Friday night, instead of going out to eat, I made Tim and I chicken burgers from trader joes. They were a little more lime-y than I expected, but I still liked them. Can we just talk about this picture for a second? I layered two patties with guacamole and topped with tomato and grilled onions. Perfection.
Hope everyone has a great week! I’m going to finish my 30 days strong. And start reintroducing beans, peanuts, and legumes first to see how my body handles that. I see a black bean burger in my future!
