Happy Monday! Hope everyone’s week is off to a great start. This weekend was quite a whirlwind for us. My husband’s friend got married in Wichita, so we took off work Friday, and headed to Kansas bright and early for a long weekend. There was a lot of dancing and a lot of wine, so while it was fun to celebrate, I’m happy to be back to my norm this week in terms of food and sleep.
Other than the atypical out of town food, I thought I’d share some of my recent eats today. Last week knowing we’d be out of town I didn’t get the standard grocery haul on Sunday. I always have to go-tos on hand in the kitchen and was able to quickly prepare some yummy meals anyway.
I’ve been absolutely loving kale lately. I’ve been adding them to smoothies for an afternoon snack or roasting them to serve as a bed for chicken or eggs.
Another meal that is perfect when I don’t have too many groceries in the house is chia seed pudding. I cut up some frozen mango and strawberries, and it felt as though I was eating a bowl of summer.
Finally, this meal. Oh my goodness. It was so good I had it three nights last week.
I made a deconstructed salad using the chicken lime burger patties from trader joes. It was so filling and satisfying; this might have to happen again next week.
