Happy Monday Friends!
We had a super fun weekend celebrating my husband’s birthday! Summer birthdays are just the best. He had a boy’s poker night on Friday. I saw that as my chance to treat myself to a juice and a walk to get out of the house for a bit. Saturday, he and I went to race bumper cars before meeting up with friends at a brewery. I think he had a blast, so mission accomplished.
Let’s talk recent eats. I’ve been so inspired by the fresh produce with all my meals. Everything looks so colorful and bright. I go to the nearby farmers markets at least once a week. I have more fruit in the house than I know what to do with. But I love it.
A smoothie has been almost a daily occurrence since we’ve been battling some intense humidity here in Chicago. My favorite part about smoothies is loading up on spinach, but that taste being completely masked by the fruit. This one is ice, spinach, plant-based protein powder, blueberries, strawberries, almond butter, and almond milk.
As if I need another reason to eat almond butter; I’ve discovered this beautiful combination, and I’m hooked. Baked sweet potato with blueberries and almond butter. Half way through I added cinnamon as well.
Dinners have been all over the place. I’ve made several breakfasts for dinner because well breakfast food is the best food.
My Austin trip inspired some mahi mahi tacos this week as well. Fantastic. I think shrimp tacos will be next.
Finally, one of my favorite things about summer is outdoor eating. We haven’t done it nearly enough, but we have managed to squeeze a few date nights in here and there. My go-to is a bun-less turkey burger with sweet potato fries.
